Spicy Keto Crab Cakes

Spicy Keto Crab Cakes

Ingredients 

2 Tbsp Butter
1 Large Jalapeno - You can add another Jalapeno depending on how spicy you like it
1 Rib Celery Finely Chopped
1 Green Onion or Small Bunch of Fine Leaf Chives (From your kitchen herb garden:)
2 cloves of Garlic minced

1 tsp Frank's Hot Sauce
1tsp Dijon Mustard
4 Tbsp JUST Chipotle Mayo
16 oz Lump Crab Meat (Trader Joe's sell frozen crab meat that works nicely for this recipe - 2 boxes)
1/2 cup Crushed Pork Rinds
1/2 cup Parmesan Cheese
Avocado Oil or Olive Oil (For frying) 
Sea Salt

1.Melt butter in large skillet add Jalapeno, Celery, Chives, Garlic, Sea Salt cook for approximately 5-10 minutes on medium heat or until vegetables are soft.

2. Combine Egg, Hot sauce, Mustard, 2 Tbsp Chipotle Mayo, Pork Rinds, Parmesan Cheese and vegetable mixture in a large bowl until well mixed. Add in the crab meat and mix well until the meat is well coated with mixture.

3. Cover Cookie sheet or plate in aluminum foil or parchment paper. Separate the Mixture into 12 equal patties place them on the prepare cookie sheet and refrigerate for 1 hour.

4. Remove Crab Cakes from fridge, Heat 2 Tbsp Avocado/Olive Oil in skillet and add Crab Cakes cook on medium heat 5-10 minutes each side until they are browned and crispy. Serve immediately with Chipotle Mayo as a dipping sauce for extra spicy flavor.

Mom's Birthday

So It would have been my Mom's 70th Birthday today. I can hardly believe this is the second birthday I won't be able to call her to wish her Happy Birthday and tell her how much I love her. I miss you Mom, I love you Mom, and Happy Birthday Mom!

Afternoon Naps

I think I took at least a 3 hour nap today.
Woke up and it was dark.
I hate it when I do that.
Not that that has happened much in the last two years, things have been entirely too busy to take a moment for any rest. This week though I think i've fallen asleep twice on the couch, weird!

Now we are watching Cider House Rules from Netflix. How can I have not see this before? I think in the past I have seen bits and pieces of it, never the whole thing. So we are watching it now anyways.

Today I finally made something else for Jude, a camouflage bib and i'm working on a tie onesie that will hopefully bring lots of laughs and smiles.

Tomorrow i'm going to work on some smaller baby blankets with super soft minkee/minky on one side and plain cotton on the other. Should be some nice easy projects.

Oh and because I didn't feel like changing my thread tonight I also made a remote caddy because I still had black thread on my machine. I know, what a weirdo, would have taken me a lot less time to just change it and finish the tie onesie. :) Maybe i'll post a picture tomorrow.

What are we doing?

I drank about 1/2 gallon of OJ trying to get this baby to do his kick count. He must have been tired because of all the late nights we've been up watching movies, etc. So the lack of sleep probably just caught up to him. He just wasn't moving so I drank tons of OJ and Cold water (Both which usually have him kicking up a storm). Then he finally started kicking between 8-8:15. Thank God!

I haven't felt like doing much lately, Paul and I took a late walk tonight and only went about 1 mile. LAZY!! Then watched some more Netflix.

I think amidst all the horror stories about pregnancy that everyone has been more than willing to share with me during my pregnancy (To make me ultra paranoid and extremely hormonal) and all the other unwanted advice and scary stories noone thought to mention that..

Most 1st babies are commonly delivered OVERDUE?
Is that true? Give me your input on that one.
We thought for sure this kid was coming before we could manage to get everything ready (I know, I know, everyone feels that way) and now I feel like we are sitting around waiting.

The anticipation is literally killing me and i'm sure it's killing Paul too. I don't even bother to tell Paul even when I have some big contractions even if they are regular because ultimately they always go away and there is no sense in getting him all excited about me going into labor because I feel like it will NEVER happen. I wonder what the world record for length of pregnancy is? I know a few people I know have gone up to 42 weeks and I pray that I don't have to go that long!

On another note the only semi-productive thing I did today was put together Aiden's Crayon Roll....In camo of course......

Pregnant Ladies Float

Today was a wonderful, mild summer day. Not too hot, not too cold. We got a break from June Gloom today, the sunshine was just what I needed.

I checked the weather early this morning and weather.com said that it would be cloudy today here with temp in the 60's and I was bummed. I really wanted to go swimming today. I ended up going to sleep really late in the morning and then just slept a little into the day. I woke up to the construction workers applying stucco to the new townhomes being built outside our door. Thanks Danielle for warning me about how noisy that is, I have been watching the construction progress and anticipating the noise.

I got up and Paul and I went for a walk, only a mile, my back hurt too much from overcompensating for my belly today. When i've been walking lately 3 miles is usually not a problem now that my sciatica has mostly become intermittent with the baby repositioning himself.

It was fairly hot today though so we went straight home after walking and changed for the pool. The pool was awesome, especially since I feel like my belly is so big it could not possibly get bigger and my feet just started swelling really bad last week!

When we got to the pool Paul said "Let's not have any impromptu water births while we're here". At the pool Paul was laughing at me since I like to just float on my back in the pool and now my belly is a huge bump sticking up out of the water. As I was floating in the pool with my ears under water I was imagining how loud it is for Jude all the time in his little swimming pool:) We are definately going to use some of Karp's methods for calming crying when he decides to be born. Paul can't wait to use the loud shhhhhhhhhhhh technique:)


FYI Pregnant ladies float:) As evidenced by this funny picture of my belly poking out of the water.

Bib For Aiden

Finally just finished sewing this bib for little Aiden. Made it out of Pirate Flannel:) It has a pocket to catch food or to fold the bib into after a messy meal until it can be washed. Hopefully I didn't make it too large:)I just figured the more coverage with kids the better off you are!!:)

Jude's First Blanket

This brown baby blanket will be great when Jude finally arrives! I used a sweet quilting print i've had and loved for a long time and just haven't used with a super soft minkee/minky back:)Here is a picture:

Took forever to pin and forever to sew with soft batting between. Paul had to help me with laying out the layers so many times because my bowling ball belly makes it really difficult for me to cut and lay out fabric for large projects:) What a good hubby, he helped me with literally no complaining.

If you are interested in sewing one of these blankets they are very easy to sew. You just need to decide what size blanket you want to make and pick a nice soft cotton (quilting ones often have cute prints) cut to the size you want then choose a soft minky as a backing and cut slightly larger than the cotton. Here is a tutorial that basically explains the manner in which I constructed my blanket, only difference is that I added batting for more substance. Minky Blanket Tutorial

Nursing Cover and Fleece-Cotton Floor Blanket

I started this Nursing Cover months ago before I got a fabulous one for my shower from my friend Diana. I'm finally trying to finish up some of the many projects i've started over the last couple of months.





I utilized this tutorial to sew this Nursing Cover and modified it slightly adding a pocket on the inside for anything I might need to store:) Nursing Cover Tutorial

I also finished a trial run of the first floor blanket i'm going to sew. It is just some green quilt fabric backed with some super soft no-pill fleece. It's kinda small so the next one I will make with be at least 45 X 60 which is standard crib quilt size, even though it is for the floor:)

Lunch and Hanging out with Karleen and Devyn

I've been busy trying to keep busy so that I don't feel like i'm waiting for the baby to come. Karleen came over with Devyn for lunch today we had fun going for a walk and he tested out a taggie blankie. I am pretty sure he loves them so I made him this blankie to keep him entertained.

Taggy Baby Ball

I made a taggy baby ball over the last few days also. I did a quick one with some fabric and ribbon I already had. Turned out ok I think I need to finish a little stitching on it.

Car Seat Blanket or Tent


So this is my first attempt at making a Car Seat Tent / Blanket. For use so that when the baby actually sleeps he can stay sleepy getting in and out of the car and while running errands, etc. The Camo pattern makes me laugh!:)

I did make some modifications to the tent, it is not as wide as the tutorial states to go, it is actually 32" wide instead of 37" (I used fabric I already had so I had to make due with what I had) but it really doesn't matter and I didn't make the oval they talk about. I just rounded the corners, it is just easier and more exact that way:)
